I have kept the butter spread about a month or two, and I am guessing it would keep longer. I doubt you could freeze it; although I haven&#8217;t actually tried it&#8211;I think it would separate out. You could always make a 1/2 recipe&#8211;it really only takes a few minutes. You do end up with a greasy bowl afterwards, so my strategy is to use the bowl to make a coffeecake or muffins afterward.  </p>
